Wood Ear Mushroom Salad

Ingredients:

Wood ears 2 cups 4 cups 6 cups
Garlic 1-2 cloves 3 cloves 4-5 cloves
Red chili peppers 1/2 pepper 1-2 peppers 2-3 peppers
Chinese black vinegar 3/4 tablespoon 1½ tablespoons 2¼ tablespoons
Light soy sauce 1/2 tablespoon 1 tablespoon 1½ tablespoons
Sugar 1/2 teaspoon 1 teaspoon 1½ teaspoons
Sesame oil 1/2 teaspoon 1 teaspoon 1½ teaspoons
Scallions/cilantro 1/2 tablespoon 1 tablespoon 1½ tablespoons

How to Make:

  1. Boil the wood ears in water for 3-4 minutes, then drain and rinse with cold water. Let them cool completely and drain excess water using a salad spinner if needed.

  2. In a large bowl, mix garlic, chili peppers, vinegar, soy sauce, sugar, and sesame oil until sugar dissolves.

  3. Add the wood ears to the sauce and mix well. Refrigerate for 30 minutes.

  4. Before serving, stir the mixture again and garnish with chopped scallions or cilantro.
