Adare Manor Pancakes

Before You Begin

Egg whites are weighed (~30 g per egg). Make the meringue first, then fold into the batter just before cooking.

Serves:

Roughly 1, 2, 3, or 4 portions of pancakes

Ingredients:

Ingredient 1 egg 2 eggs 3 eggs 4 eggs
Egg whites 30 g 60 g 90 g 120 g
Caster sugar (for the meringue) 2 g 4 g 6 g 8 g
Icing sugar 12 g 25 g 38 g 50 g
Baking powder 4 g 8 g 11 g 15 g
Plain flour 80 g 160 g 240 g 320 g
Whole milk 125 ml 250 ml 375 ml 500 ml
Vegetable oil 30 g 60 g 90 g 120 g

Preparation:

  1. Whisk the egg whites with the caster sugar to a soft-peak meringue.
  2. Mix all the other ingredients together into a smooth batter.
  3. Fold the meringue into the batter.
  4. Cook on a buttered pan over medium heat until bubbles form, then flip.

Notes:

Full batch (8 eggs / 240 g egg whites) uses 15 g caster sugar, 100 g icing sugar, 30 g baking powder, 640 g flour, 1 L milk, and 240 g vegetable oil.
